Tuscan Bean Pasta Salad

The Tuscan Bean Pasta Salad is another one of our favorite summer salads, perfect for your next potluck or BBQ. We used our organic soy spaghetti with sun-dried tomatoes, peppers, spinach, olives tossed in a tangy dressing. You’ll definitely want to give this one a try! Ingredients

SALAD
  • 1 package (8oz) of The Only Bean Soybean Spaghetti
  • cup sun-dried tomatoes
  • 6.5oz can olives, sliced
  • 1 cup spinach
  • 1/4 cup basil, chopped
  • 1/2 cup parmesan cheese
DRESSING
  • 3/4 cup olive oil
  • 2 tablespoons white vinegar
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon dry oregano
  • 1 teaspoon dry basil
  • 1 clove garlic
  • Black Pepper to taste

Instructions

  • Step 1 – Cook 1 pack of The Only Bean Soybean Spaghetti according to directions on the package.
  • Step 2 – In a small bowl, whisk dressing ingredients together.
  • Step 3 – In a large bowl, add pasta, sundried tomatoes, bell pepper, olives, spinach, basil, and parmesan cheese. Toss to combine.
  • Step 4 – Top with dressing and serve.
