In an effort to be more conscientious about my food choices, I decided to give substitute bean pasta a whirl. I opted for the variety pack so I could try out the different flavors. So far, I have made Thai Red Curry with the thicker soybean fettucine noodles, and meatless Aglio e Olio pasta with the edamame spaghetti. Both dishes came out with a surprisingly al dente bite to the noodles, and I slurped up every last nood. My personal preference was the edamame since it has a more muted flavor that did not overpower the light olive oil/garlic flavoring of the Aglio e Olio sauce. I ate a small bowl for dinner, and did not feel any hunger or snack cravings because these noods are packed with protein and fiber! Can’t wait to try the black bean next 🙂

When I saw this product show up on my search for vegetarian, gluten-free pasta, I was excited, to say the least. Looking at the ingredients, I was pleasantly surprised to see that each of their pasta has only one ingredient. Being very health conscious, the thing that I was initially most concerned about about was the fact that these noodles are created overseas. After messaging the seller and doing my own research, it seems that China actually has very strict regulations in place that restrict GMO soybeans from even being planted. On the other side of that, I learned that 82% of soybeans produced globally are GMO. It turns out that these could be healthier than US-based alternatives! Overall, I’m very happy that I tried this brand’s pasta, and looking forward to trying all of their other varieties!

Gotta try them all! A friend of mine suggested these and I couldn’t decide which one to get so I got the variety pack. My favorite are the Edamame pasta but they were all good. I cooked these just like normal pasta but much quicker (4-5 mins). It’s one of the easiest pastas to work with since they don’t get mushy or clump together. I even had some left overs that I reheated and the texture held up. Very impressed!

On my quest to achieve a true gluten-free diet, without missing delicious breads and pastas, I have tried quite a few alternative products. Some noodles fall apart after or while cooking no matter what you do to try to keep them whole, and they are almost guaranteed to fall apart as day old left-overs. These noodles are not like that at all. They don’t take long to cook, and if for some reason there are left-overs, they are as good as they were when freshly cooked. Yes, they are pricey, but in my household pasta is a special treat, so these work well for my family.

I have had black bean pasta a couple times and LOVED it. It is super filling, but not heavy. Very nutrient dense– super high protein! I was excited that the multi-pack also came with edamame and soybean pasta. Both were equally as awesome as the black bean. The texture is heartier than normal pasta, so that takes a minute to get used to, but it is easy to make and works well in most any pasta dish. I did a lemon chicken pasta with my soybean noodles and it was to die for. I found that I ate less than I would’ve if it had been normal pasta, since it is so filling. Will definitely buy again. And again. And again.

I was elated to find these—-and was ready and waiting to whip up some spaghetti!. They are simple to cook, and surprisingly I found myself liking the taste of the edamame noodles, sans sauce! I had to sate my curiosity, finding them delicious with a sprinkle of sea salt and a dab of butter. Edibility wise–the edamame is excellent! And appetite wise, thus far, I find these bean noodles filling. I reside alone, and I’ve yet to try the soy or the black bean—-but I know I’ve endless options, recipe-wise, in regards to incorporating them in myriad ways. I opted to use/try the edamame first, because there were two boxes of edamame spaghetti, whereas the others were each different, It will take me some time, to use them all–at inasmuch as they are a bit pricey, I will relish each meal accordingly. I am glad that i found these as an alternative to standard pasta in my diet—-I get the flavor and use, but it’s sans guilt for me!

I really like this pasta with sauce the taste from regular pasta is negligible but I like my pasta to basically be drowning in sauce. I think that there is a difference in texture it is a bit more chewy. I wish this was more widely available because I like that it has higher protein content compared to traditional pasta. It is fairly expensive though about 4x the cost of regular pasta. I would love to see greater variety of pasta shapes such as bow ties. My sister also enjoyed this pasta as well. I need sources of lean protein since I’m trying to build muscle while keeping my calories down. I found explore cuisine’s black bean pasta a couple of years ago and couldn’t believe how much proteins it had for the calories. I honestly haven’t tried the edamame or soy bean versions yet, but the black bean is pretty similar to explore’s version but the texture is less “cardboard-y”… it also has a ton of calcium, iron, and potassium, which are all things I try to keep an eye on. It seems like this might be a couple of bucks more than explore, but I think the upgrade on texture is worth it.

I love these! I’m diabetic and these are a great option when I want to eat more pasta than I could, even if the other option is whole wheat. There is a ton of fiber, and each has it’s own flavor. The soy is close to whole wheat pasta flavor. The black bean and edamame have a slightly beany flavor. The edamame is my favorite. They make more than you’d think, like any pasta.

I bought this when I was just starting my keto diet, so unfortunately, I only noticed the low net carb count and did nor realize that beans are not really keto approved. I’ve since then changed to a low carb diet, so enjoy these on occasion. It’s more expensive than normal pasta (of course), and has a sticky textures so each individual spaghetti gets stuck together easily. Of all the pasta alternatives, this one has the closest texture to pasta so I may buy again. Very filling! Other alternatives are:

First off, this opinion is not paid for, no one gave me a free box of noodles (although hey…..if you wanted to) just so we are clear.
I love these noodles, the true test is they can get away with EVOO, garlic, salt and pepper. These cook faster than normal pasta, and do really require you to mind the cooking time to make sure you get that perfect al dente. They also stick to each other a little more than normal wheat pastas, so make sure you finish them in a sauce or lightly toss in an oil of your choice if they won’t be eaten right away.
All in all the flavor is good and very very close to wheat pasta. Their nutrition profile compared to regular pastas or egg noodles is SO much better. Way more fiber, more protein. I don’t eat meat or dairy, so they greatly help balance out my nutritional needs. They are way more filling than regular pasta.

I prepared the entire box and ate about 1/4-1/3 the first day. It seemed watery, even though it was well drained. I stored it in a Ziploc bag overnight and had some the following day. Not watery at all and a reasonable facsimile to regular spaghetti. A bit lacking is flavor but not bad.
