Ingredients

  • 1/2 package (4oz) of The Only Bean Edamame Spaghetti
  • 1 large pineapple, halved
  • 1 cup cherry tomatoes, halved
  • 1 thinly sliced green onion
  • 1/3 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1/2 tbsp chopped Thai chili peppers

Instructions

  • Step 1 – Cook 1/2 pack of The Only Bean noodles according to directions on package.
  • Step 2 – In a large bowl, mix sliced pineapples, pasta, tomatoes, onion, cilantro, and mint.
  • Step 3 – In a separate bowl, mix Thai chili peppers, brown sugar, lime juice, and fish sauce.
  • Step 4 – Combine sauce with noodles and vegetables.
  • Step 5 – Place pasta salad into pineapple boat and garnish with crushed peanuts.
